    Cancers versus crayfish: which is right?

    Before we dive into naming conventions, let’s talk about what these creatures are. Crayfish are small freshwater crustaceans. They look like small lobsters, but are only found in freshwater rivers and streams. These little crustaceans have so many names that it’s no wonder people think they refer to several animals.

    Depending on where you live, you may hear how these creatures are called:

    • Cancer
    • Crawdads
    • Crawdaddies
    • Mountain lobster
    • Spiny lobster

    What you call these animals, in fact, simply depends on where in the world you grew up. In North America, northerners usually call them “crayfish”. Inhabitants of the West Coast and parts of the Midwest call them “crayfish” and southerners usually call them “crayfish”.

    Other names for them are usually used in certain regions, usually as a kind of slang. However, it gets even more confusing if you are traveling the world. In Australia they are called “yabbi” or “kuras”, and in Singapore they are called freshwater lobsters.

    For technical information, crayfish is a common term in Standard American English. However, when you are cooking or dining, the term “raki” is more commonly used.

    Where to find crayfish?

    Crayfish can be found almost anywhere there is shallow, slow moving fresh water. This includes lakes, streams, ponds, swamps, and rivers. There are more than 400 species, of which 250 live in North America. This means that these little creatures are fairly easy to find wherever you live.

    What do crayfish look like?

    Crayfish are crustaceans that resemble miniature lobsters. They have a distinct pair of strong claws, a sturdy shell, and a wide, flat tail. Most crayfish are dark blue or red in color, but some species can also appear greenish black or brown.

    How does crayfish taste?

    Whether you call them crayfish, crayfish or whatever, these little crustaceans are considered a delicacy almost anywhere in the world. They are found in a wide variety of seafood dishes, and in places like Louisiana and the Deep South, they are an integral part of authentic seafood gumbo and other regional cuisines.

    Crayfish have a distinct meaty flavor that differs from the more delicate lobster flavor. The meat is usually described as sweet and gives off a strong flavor when cooked.
