As New York Rrestaurants are returning to closed dining areas at full capacity, Eleven Madison Park (EMP) plans mix things up a bit in the kitchen with healthy empathy. More than a year after the doors were closed due to COVID-19, Head of EMP as well as Co-owner Daniel Hamm announced that the renowned gourmet restaurant will cut meat and reopen. June 10th.
“The pandemic has brought our industry to its knees. With our closure, we fired most of our team and really didn’t know if Eleven Madison Park would be there, ”Hamm said.
“We had a small team, and thanks to their wonderful efforts in collaboration with the non-profit organization Rethink food we’ve prepared nearly a million meals for food-insecure New Yorkers, ”explained Hamm, noting that he began to experience“ the magic of food in a whole new way ”through this life-changing work.
Hamm decided that this work should become the cornerstone of the proclaimed restaurant, one of Only 14th place in the USA with a three-star Michelin rating.
“In the middle of last year, when we started imagining what the post-pandemic EMP would be – when we started thinking creatively about food again – we realized that not only did the world change, but we changed how,” Hamm said. “We have always been responsive to the impact we have on the environment, but it has become increasingly clear that the current food system is simply not sustainable in many ways.”
With this in mind, Hamm and his team pondered which aspects of their dishes are most delicious and how they can achieve the same level of taste and texture without meat. They then worked tirelessly to create a compassionate space in which: “each dish is prepared with vegetables, both terrestrial and marine, as well as fruits, legumes, mushrooms, cereals and much more. “
“It’s time to reimagine luxury as an experience that serves a higher purpose and maintains a genuine connection with society. The dining experience is more than just a plate, ”said Hamm. “We’re thrilled to share the incredible power of plant-based cuisine, deepening our connection to our home, both our city and our planet.”
After reopening with a tasting menu that still stands $ 335, Eleven madison park will also provide free meals for food-insecure New Yorkers. This food will be delivered Eleven Madison Truck, managed by the restaurant staff in partnership with Rethink food.
